Made exclusively from 100% Chato Agave angustifolia, this spirit embodies tradition and expertise. Steam-cooked in a 150-year-old brick oven and mechanically milled, it undergoes open fermentation for seven days in stainless steel. Double distilled to perfection, first in a small stainless steel pot still, and then in a larger copper pot still. Rested for 45 days in steel, it presents aromatics of black bean dip, roasted apple, candy corn, salted caramel, melted butter, and yam, with a palate bursting with green herbs, sweet peppers, egg custard, coriander, and hints of cinnamon and almond.
